Gut Loving Chocolate and Coconut Panacotta (gluten and dairy free)
I had a hankering for cheesecake!! I raided the cupboard to see what I could come up with - and this is how it turned out! Delicious!!
This recipe contains real gelatin, which is high in protein and collagen. Real Gelatin is amazing for healing and strengthening our gut lining, protecting our joints, strengthening our skin and nails and helping us sleep.
Sounds like a good desert to me!! This desert can be adjusted to suit your taste in sweetness.
1 x 400 gram can full fat coconut Milk
1 Tablespoon of Rapadura Sugar
Pinch of Salt
1/2 teaspoon of vanilla essence
1 Tablespoon of Cacao
2 Tablespoons of Gelatin (I use Great Lakes or Changing Habits)
1 cup berries (I used frozen blueberries)
Gently heat coconut milk on the stove top to a moderate heat (do not bring to the boil as the gelatin won’t set)
Add sugar, vanilla and cacao and salt. Stir well to combine.
Taste mixture to ensure there is enough sweetness for your taste buds.
Add Gelatin, continue to stir until all the crystals are dissolved and the mixture is well combined.
Pour mixture into individual glasses / cups or into a cake or baking dish.
Place in the fridge for 3-4 hours to set.
Serve with fresh berries and greek yogurt.
