I love playing with food and creating new things in the kitchen!
These cookies are AMAZING! They are Gluten and Can be Dairy Free, High in Protein, Low in Sugar and DELICIOUS!
Perfect for School lunch Box snacks!!
1 x Tin chickpeas tinned, rinsed
1/2 Cup peanut butter (I used Mavers Brand) OR Tahini to make nut free
1/4 Cup milk of choice
1 tsp vanilla extract
1/4 Cup Sultanas
4 Dates Softened in boiling water
1 tsp baking powder
Line a baking tray with baking paper and Preheat oven to 200 degrees
Drain chickpeas into a colander and rinse and dry well
Add all ingredients (except sultanas) to blender
Blend until smooth.
Fold in the Sultanas.
Drop mixture onto baking paper Tray using a tablespoon.
Bake the cookies for 15 minutes or until lightly browned.
